What does a single service entry contain?
Each entry is one workshop visit. Read it field by field:

What does a healthy BMW service pattern look like?
Oil services on the schedule the car's Condition Based Service set, never more than two years apart. The CBS data logged at each visit shows whether it was done on time.
Brake fluid changed about every two years.
Vehicle checks and inspections at sensible intervals.
Repairs that make sense for the car's age and mileage.
Mileage rising steadily, roughly in line with how long the car has been on the road.
Which red flags should I look for?

Is a digital record better than a stamped service book?
Yes, for one simple reason: a stamp can be added later, a digital entry is logged by the workshop at the time of the visit, with the mileage. Paper books also get lost with a change of owner, while the digital record stays attached to the VIN.
One caveat. Independent garages do not always appear in the digital record, so a gap is not automatically bad news. If the seller has invoices that fill it, the gap is explained.
